What says summer better than muddy baby feet, endless laughs (usually followed by tired tears) and popsicles?!? I don't know about you guys but my kids absolutely love them. It's as if every time Zo get's hot he needs a popsicle to help cool him down 😂 Yes, he plays that card every time. He even said it during a long road trip to Montreal during the dead of winter…and he got one.
One of my missions this summer has been to create healthy versions of these sweet treats. And with the official kick off of summer coming up this weekend, I figured why not start with a classic picnic treat turned into that sweet goodness of a popsicle. I bring to you my version of a PB&J frozen and on a stick!
As many of you know I am a huge fan of all natural products. My absolute favorite peanut butter is by Crazy Richards! You can check out all my favorite peanut butter recipes I've made using them here, here, here, here and of course here too! Yep, we've got a thing for peanut butter in this house. And if your house can't do the peanut butter thing like we can don't worry Crazy Richards carries nut butters too. All of my recipes can be substituted with any form of nut butter!
My boys just can't seem to get enough of these popsicles and with only two tablespoons of honey in them I have no problem with them having seconds or even snagging one for breakfast! We will for sure pulling these out this weekend when our friends stop by!
- 1/2 cup Milk
- 1/2 cup Greek Yogurt
- 1/2 cup all natural Peanut Butter (I like Crazy Richards)
- 2 tbsp honey
- 1 tbsp vanilla
- 1 tbsp chia seeds
- 1 cup frozen raspberries
- 16-20 fresh raspberries
- Pour all ingredients except the fresh raspberries into a blender.
- Blend till smooth.
- Place 3 raspberries into each popsicle holder and muddle the raspberries into the bottom.
- Pour popsicle mixture into the holders and insert sticks.
- Freeze popsicles for about 3-5 hours.
