I’m pretty sure I could eat pizza at least 3 times a week. But I know that all those carbs & added goodness don’t treat my hips all too well! So to give me that delicious pizza flavor without all the carbs I make this super easy pizza salad. Hopefully, it will help you with your pizza cravings too, at least for 1 of the 3 nights!
- 3 cups arugula
- 16 pepperoni | cut in fourths
- 2 cheese sticks
- Pepperoncini | 8 small or 4 large
- 1 tbsp dressing | recipe here
I like to layer my salads.
So I start with 1 ½ cup of arugula.
Then add in ½ the pepperoni, cheese & pepperoncini.
Top with the rest of the arugula & the remainder of pepperoni, cheese & pepperoncini.
Finish with 1 tbsp of dressing.
