CRANBERRY BLISS BARS

Here I am again on my healthy treat kick! This one has quickly become a favorite in our house. Hope you enjoy as much as we do!

INGREDIENTS:

Bar:

  • 2 cups all purpose flour 
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/3 cup honey
  • 1/3 cup maple syrup
  • 3 tbsp melted unsalted butter
  • 2 large egg whites or 2 prepared flax eggs | ( 1 tbsp ground flax to 3 tbsp water per egg)
  • 1/4 cup unsweetened apple sauce
  • 2 tsp vanilla extract
  • 2/3 cup white chocolate chips 
  • 1/3 cup dried cranberries

For the Frosting:

  • 8 oz 1/3 less fat cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 2 o white baking chocolate, melted*
  • 1/3 cup dried cranberries


DIRECTIONS
Preheat over to 325°F

  1. If you want this recipe to be egg free here is what you need to do first! Start by making the prepared flax eggs. Put 2 tbsp ground flax and 6 tbsp water in a small bowl. Whisk together and let sit in your refrigerator for 30 minutes.
  2. Spray at 9 x 13 pan with cooking oil, I'm a huge fan of the coconut oil spray from trader joes!
  3. In a large bowl mix together 2 cups flour, 1 tsp baking soda, 1/4 tsp salt and 1/4 tsp cinnamon.
  4. In another bowl combine 1/3 cups of honey, 1/3 cups of maple syrup, 3 tbsp melted butter, 2 large egg white or 2 prepared flax eggs, 1/4 cup apple sauce, and 2 tsp vanilla. With a hand mixer whisk together till bubbly, it's kinda foamy but not totally...hope that makes sense, basically mixed together really well!
  5. Add the wet to the dry. I did this in two parts to make stirring easier!
  6. Add in 2/3 cups of white chocolate chips and 1/3 cups of dried cranberries and stir together.
  7. Pour mixture into pan and spread evenly with spatula. 
  8. Bake for 20-25 minutes or until golden brown.
  9. Let them cool inside the tray.
  10. To make the frosting use a mixer to beat the 8 oz of cream cheese, 1/2 tsp vanilla and 1/2 cups powder sugar till completely smooth. 
  11. Once bars are cool spread frosting over them. 
  12. Sprinkle 1/3 cups dried cranberries over the top.
  13. Melt the 2 ounces of white baking chocolate in the microwave in 15 second increments stirring between each one until the chocolate is melted. 
  14. Once melted drizzle over the bars. 
  15. Refrigerate until you're read to eat!
